I love Christmas. Specifically, I love cooking. I hit the grocery store at midnight on the way back from Cleveland last night and picked up a few necessaries...and thought, OK, I'm going to make a mincemeat pie - have to make, very hard to find in the USA and Meijer stopped carrying them two years ago - so WHY NOT also make an apple pie? How hard can it be?
Tomorrow's plan:
Roast root veg (parsnips, beets, sweet potatoes, carrots, eggplant) for spinach and root veg salad to be eaten with leftover turkey in days following the Big Day.
Roast eggplant for baba ganouj.
Bake apple and mincemeat pies.
Cook 12-pound turkey, mashed potatoes, stuffing, asparagus, carrots and the third-biggest pot of gravy. This is a meal for two. We like leftovers.
Bake special oatmeal and chocolate in the batter cookies. Bake shortbread cookies. Bake some sort of chocolate with alcohol item. Bake cranberry-orange-chocolate chip quickbread.
And while it's all cooking - clean the second half of the kitchen (did the first half at Thanksgiving - I'm down to the cupboards over the fridge and the floor level cupboards.)
